Why Use Coconut Cult in Flatbread?
Coconut Yogurt is a not-so-secret weapon for making soft, tender flatbread. Its creamy texture adds moisture to the dough while its natural acidity brings a subtle tang that works especially well with savory herbs.
With the added benefit of 16 live probiotic strains folded right into the dough. (Just one thing to know: our probiotics like it cool. High heat can reduce the live cultures, so consider this one a flavor + texture flex rather than your daily probiotic ritual. Save a cold scoop for that. 🥥🌿)
Ingredients
- 2 cups all-purpose flour, plus extra for dusting
- 1 cup Coconut Cult Original
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tbsp fresh herbs, finely chopped (rosemary, chives, or parsley all work well)
- 1 tbsp olive oil, plus more for cooking
- 1 clove garlic, minced (optional)
How to Make Coconut Cult Herb Flatbread
- Mix the dry ingredients. In a large bowl, whisk together the flour, baking powder, and salt.
- Add the wet ingredients. Stir in the Coconut Cult, olive oil, chopped herbs, and garlic (if using) until a shaggy dough forms.
- Knead briefly. Turn the dough out onto a floured surface and knead for 2–3 minutes, just until smooth. Avoid overworking it.
- Rest. Cover the dough and let it rest for 10 minutes — this makes it easier to roll out.
- Divide and roll. Cut the dough into 4–6 pieces and roll each into a thin round, about 1/4-inch thick.
- Cook. Heat a lightly oiled skillet or griddle over medium-high heat. Cook each flatbread for 2–3 minutes per side, until golden brown spots form and the bread puffs slightly.
- Serve warm, brushed with a little extra olive oil if you like.
Can I Make This Flatbread Ahead of Time?
Yes. The cooked flatbreads keep well in an airtight container at room temperature for up to 2 days, or in the fridge for up to 5. Reheat briefly in a dry skillet or toaster oven to bring back the soft texture before serving.
